suggestions for one week (or so) solo in Basque country this October

Hi, I'm registered for a one-week Smithsonian tour of the Basque country in October, staying at the Parador at Honderribia. I then hope to travel solo for 1 to two weeks, remaining in the Basque country - thinking France. I've read some very alluring trip reports and was hoping to stay at Olhabidéa but it's booked. Does anyone have an alternative suggestion for a smallish town and/or place to stay? I may try to connect with a cooking class. (also deciding if I should rent a car). Thanks!
