Volterra Must-Sees?

We'll drive to Volterra early one morning, then spend the night before heading north. Hopefully we'll have time for one site/activity before lunch and another after, as well as the evening to stroll around town. Given our limited time in Volterra, are there any must-sees? How about any don't-bothers as well?
 
The Etruscan archaeology finds in the Museo Guarnacci are remarkable—there's the Giacometti style 'Ombra della Sera' (Shadow of the Evening) and the funniest Etruscan funerary urn of all time 'The Married Couple', who vaguely resemble Chico and Harpo Marx. The whole town is extraordinarily atmospheric in the evening—hope you enjoy it.
