What are your favorite restaurants in Rome? (That are still there)

I am helping a friend find a spot for an excellent dinner with her family Christmas week.

I was in Rome not too terribly long ago, but it was still in the Before Times, so I don't know what has changed.
(No restrictions but should be fairly central in location.)

Grateful for any and all suggestions!
 
Enoteca Capranica. We ate there twice last week, and have probably dined there a total of 5 or 6 times. The owner, Maurizio, has always been gracious to us. The food is solid and there is an extensive wine list. The waiters/sommeliers are enthusiastic about the wines and have never tried to upsell. There are lots of choices, many of which are not exported to the states. We are surprised that this spot has not generated more of a buzz.
 
We return again and again to Ristorante Sant'Andrea, near the church of Sant'Andrea delle Fratte. Always good, dependable Roman staples. (I wrote about it here:

Just ate there again in September, and just as good, and the family members we took loved it.

We also love Osteria dell'Arco, a tiny place near Piazza Fiume. The original owners retired but the chef who took over is fantastic. Always a great meal.
