Cameron, I also like your link very much, with all those photographs.

L'Astrance is the only one where we ate. A number of times, the first before they became Michelin stars, a few times after that.
 
Here is another way to slice the list. (no pun intended)
Top 100 sorted by Country (see attached)

I sure would like to have the job that requires one to visit all these establishments to decided the best of the best.
I would probably would have to walk between each one of them just burn the calories.

I did not see in the articles, but what criteria or process do they use to judge?

Great! One needs to sell the ranch to dine there. Alain Ducasse, many years ago on Pl Madeleine was totally obnoxious. It is why I hate the mandatory tip. I miss the 3 star Jamin and the noi star Tholumieux .
