I was directed to this site after finding Slow Travel was no longer going to be supported. Tragic. I go to Europe every few years and Slow Travel has been an invaluable source of information for me. My next trip is Ireland & maybe Scotland in 2019. Any suggestions for the best time of year to go? I usually prefer the shoulder seasons to avoid tourist crowds.

Shoulder periods are good and the weather is likely to be drier than in August. Avoid Edinburgh during the festival uless you love crowds (and if you do decide to go then, make sure you book accommodation well in advance.)
