If you haven't found Mr. and Mrs. Smith (www.smithhotels.com) yet, you should take a look. They're a third party booking site, but for super interesting/special in some way hotels. Some of their hotels are quite expensive, but many are middle priced and just plain nice.
We have used them a few times, in Edinburgh, Glasgow and Paris. The reservation is handled by Mr. and Mrs. Smith by phone, a bit of a pain if you're used to booking online, but you get a little gift from the hotel as well, usually a bottle of wine. A friend who travels extensively uses them whenever she can and says she's never been disappointed.
