Advice on specialist food tour operators?

Ciao, I just wondered if anyone knows of any specialist food/wine tour operators in Italy, particularly with a focus on local producers/organic produce. I would love to work in this area so am looking to contact places for any voluntary or paid opportunities. Any tips or advice very much appreciated! Grazie mille! Melanie

Contact Judy from www.divinacucina.com . She runs food tours.
@KeithfromVA suggested @Shannon from GrapeHops in the France thread. She knows a lot about Italy.

More names will come to mind and I will post again. Let us know what you find out.
