We have not spent much time in either of these departments but there are a few things we have seen and liked.
Roman Empire sites (which may not interest you since you live in Italy) - Ambrussum (Oppidum d'Ambrussum), Loupian Roman Villa (Villa-Loupian), Saint-Thibéry Roman Bridge.
South of the Aude district but very interesting are the cave paintings at Niaux. Make reservations ahead. More info here.

Pézenas is a town west of Beziers that I am interested in, but I can't find my notes on it. We talked about it briefly in this thread.

Pauline, Thanks for the info. We do have access to plenty of Roman sites here but worth a stop if we are near one of these.
I know we've driven past Pezenas before but didn't look into the town, an option.
We've been to Carcassoone - very unique.
The farthest south we've been is around Lagrasse, would like to see the Peyrepertuse area.

We had some great days in the Languedoc area.
We visited Collioure - bello!
Beziers - seems to be improving from what I have read about the town. Center is clean and the cathedral in charming.
Gorges de Galamus - How did they carve that road!? Makes some of the canyon roads in the Rockies look like child's play.
Peyrepertuse - Amazing old castle with a bit of a hike to get there.
And on the way to the airport we stopped at Pont du Gard - 2000 years old and looks fantastic.
The Langeudoc is always a great place to visit: lots to see and do, eat and good wine.

Bryan posted some photos. That road in the gorge is amazing! I will paste the photo below.
Pont du Gard is one of my favorite places. We have visited twice now. The first time we saw it was from the airplane as we flew from London to Marseilles!

This is my neck of the woods, so I can probably help. There are many lovely villages in the Minervois. Have you been to Minerve for example? The Canal du Midi and the villages along it are another obvious choice. I have to say that none of the places mentioned in this thread so far are in the Minervois except, arguably, Carcassonne
